Made from boning a Butcher pork loin. The ribs are not graded for size or bone count. Ribs are not seasoned or marinated. 4 pieces are placed in a cook in bag and the bag is sealed and placed on cooking rack.

Ribs are cooked to and held at 180 for 3hrs and 5 min. after the internal temperature reaches 180 degrees. Cooked ribs are then chilled according to USDA guidelines. Product is packaged 4 - 4pc bags per box and moved to blast freezer until fully frozen.
